Brussels Waffles 101: Why We Make Ours From Scratch
Belgium actually has two well-known waffle styles: the denser, sugar-studded Liège waffle, and the lighter, more rectangular Brussels waffle — thinner batter, a crisper shell, and a soft, almost bread-like inside. Ours are the Brussels style.
The batter is made in-house daily, not from a mix, which is what gives our waffles that contrast between a crisp outer edge and a soft center instead of the uniform, slightly rubbery texture you get from pre-made batter. It's more work every morning, but it's the same reason our French toast and pancakes are made the same way.
From there, we top them however you like — Nutella, strawberry, banana, Oreo, or a Turkish-inspired version with kaymak and honey if you want something a little different from the usual toppings.
